  • 1Preheat the grill on max heat. Season steak with salt and pepper then brush lightly with oil.
  • 2Turn the grill down to a medium high temperature, then place the steak over the direct heat. Keep the grill closed while the meat cooks.
  • 3After 3 minutes, rotate the steak 90 degrees. After another 3 minutes flip the steak over, then after another 3 minutes rotate it 90 degrees.
  • 4At this point turn down your grill to a low heat, and slide your steak to the side of the grill and check its doneness. Finish the steak on the low heat grill with the lid closed until it reaches the desired level of cooking.
  • 5Let the steak rest at least 10 minutes after it comes off the grill. Slice the steak into thin slices, across the grain, to reduce the toughness of the meat.
